Chocolate Cake ! !
Today I want to talk about Cake! More speficially, CHOCOLATE CAKE!!! Oh yes!!! =)

First of all, gather all your ingredients :) I am making a chocolate victoria sponge cake so I needed:

Stork Margarine
Self Raising Flour
Golden Caster Sugar
Cocoa Powder
Baking Powder
2 Carrots

You might think carrots in a chocolate cake!??! WHAT!? But stay with me! The moisture inside them helps to keep the cake moist far longer than normal! Plus of course, they add a bit of extra vitamin C to the cake! (Perhaps even 1 of your 5 a day?!) lol!

Ok here goes, METHOD:

Weigh out your Stork Marg: 

175g (or 6oz) is needed

Then weigh out your sugar:

Again 175g (6oz) needed
Cream them both together: 


This should be quite easy if the marg is fairly soft. I like to use a wooden spoon but feel free to use electric whiskers or indeed a food processor! lol :)
 Take 3 fairly big-ish eggs:
And beat them up!! hehe! :) Add this to the creamed mix.
Top and tail the carrots, then peel before grating! :)

Weigh out 175g (6oz) of the Flour:

 Add to the creamed mix and gently mix it all in.

Measure out 2 tablespoons of Cocoa (I'm using the Bourneville one) 


Then add 4 tablespoons of boiling water to make a paste :)

Add to the creamed mixture it will turn a light chocolatey colour:

Now add the grated carrot to the mix!

Grease and line two 7inch cake tins. I use a re-useable liner which is amazing! I just spritz a bit of 'Frylite' onto the bases to ensure they don't stick! Put half of the mix in one and half the mix in the other!

As we have an Aga, I use the cold shelf to stop the tops from buring! The shelf sits on the floor of the Aga. :)

They cook for about 20-25mins depending. I always find the chocolate ones need longer than a normal Vic Sponge! :) 

To check they are cooked put a skewer into them  and if it comes out clean they're done!

- Put the tins onto a wire rack to cool. :)

 Once they are touchably cooled, take off the greaseproof and leave to completely cool.

To fill them I used a Dr Oetker 'Scoptbloc Chocolate Flavour Cake Covering' i just put it into a bowl over a saucepan of boiling water until melted. I added a bit of Stork Marg to it to make it into a better (and tastier) cake filling and topping.

The finished product!!!!!!!!!! :D :D :D I topped it with a few choccie decorations!
