A Proper Key Lime Pie Recipe!
Today I bring you a Key Lime Pie recipe!! Finally, a cake (type!) recipe on the Blog!! I know, I know, it's been WWAAYY TTOO long since my last one.....but never fear, Cake is here!!

For this Key Lime Pie recipe, you will need:
  • 1 large tin of condensed milk (roughly 400g worth!)
  • 200g of digestive biscuits
  • 1 teaspoon ground ginger
  • 75g of butter
  • 125g greek yogurt with lemon
  • 125ml of double cream
  • 4 limes (zest and juice)

First off, place the biscuits into a food processor and whizz to crumbs and place the butter into a pan and place on the heat to melt. Add the ground ginger to the biscuits and mix.


 Ok so you want to zest the limes and then cut them in half and juice the life out of them!! Put the zest into a biggish bowl and then add ALL of the condensed milk and ALL of the double cream to the same bowl!! You can add the lime juice now or give it a little whisk and then add it, but it does all need to be added!! Whisk for 5 minutes until it's really thick, this can take a while and don't be too worried if it doesn't seem to be coming together, this is a rather odd recipe and I've found it doesn't come together like it should!
 Once it is all mixed together, get the bottom out of the fridge and pour over the creamy/limey mix!! Chill for a few hours and then enjoy!!!
