AD Vegan Baking with Creative Nature

AD- This post contains gifted items in exchange for this blog post and a feature on my Instagram

Hello there and welcome back to SunshineSarahxo. Today I'm going to be sharing with you Bread recipe for Banana brought to you by Creative Nature, a wonderful little British business with whom I have collaborated with previously- you may remember I made their Brownies during Chocolate Week in 2017.

I absolutely loved it and so now that I'm fully vegan I decided to reach out to see if they'd be willing to work with me whilst I try to get to grips with baking vegan!

I knew Creative Nature would be the right place to start as their baking mixes are so easy to use and are all dairy free, soya free, gluten free and free from the top 14 allergens in fact! I love how they have two recipes on the back so it's easy to make the changes necessary for your particular diet.

I have held off from baking vegan because I wasn't sure about how to replace the eggs or even where to start, thankfully with this mix I just had to change the spread to a dairy free alternative, Easy right?!

I'm going to show you just how easy this was to make and how you could try it too! Simply follow the photos below and before long you'll be an expert!

Step One:

Gather three ripe bananas and mash them in a bowl. (Typically banana bread is a way of using up old bananas so the riper the better!)

Step Two:

Add in the banana bread mix and cinnamon and mix together, adding water if it looks a little dry. (The bananas should add a bit of liquid once all mashed up.)

Step Three:

Grease a 2lb loaf tin and pop in the mix. I found that the tin I used was perhaps a bit on the larger side than I needed so next time I'll be sure to use a smaller one! I'm sure whatever you have will be fine.

Step Four:

Pop into the pre-heated oven (180 fan) and bake for 25 minutes uncovered and a final 20 covered with foil.

To test if it's cooked all the way through, simply put a knife/skewer/cocktail stick into the middle and if it's clean it's cooked.

Once cooled, you can remove it from the tin and enjoy with a cup of tea (or coffee, or whatever you like to drink!).

My Thoughts

I absolutely loved baking with Creative Nature's Banana Bread Mix, it's so simple and easy to follow it was the perfect starter for me to get back into baking now I'm vegan. It has made me think that baking isn't off the table for me anymore, I used to do it a lot before I changed my diet and became vegan.

I now just need to get the hang of replacing the eggs in my favourite cakes and I'll be all set!

Both my Dad and myself thoroughly enjoyed the fruits of my labour and I'm surprised it lasted much longer in our house than I thought it would surprisingly!

The taste was very bananary and the addition of the banana chips was a welcome one, they added a certain crunch which I really liked.

I would definitely bake this again as it was so easy and I didn't really need to buy any odd ingredients or go to a health food shop to search out chia seeds which was a welcome relief!

Big thanks to Creative Nature for sending out this Banana Bread Baking Mix for me to try, as you can tell I really loved it and will definitely bake it again!

Have you ever tried Banana Bread? Let me know in the comments!
